A traditional, old world styled Sauvignon Blanc with a nose of gooseberry, grapefruit, and grass. The palate has a crisp lemon backbone combined with tropical fruits like guava, starfruit, and passionfruit. Light and refreshing with lots of acidity, it finishes clean, with lingering minerality.

Process
The entirety of production occured in stainless steel tank, with fermentation at cool temperatures. The wine was allowed to ferment to complete dryness, to bring out the citrus and mineral notes that Long Island Sauvignon Blanc is known for. The new wine sat on its fine lees without stirring for several weeks before blending the two together. The wine then rested in tank until bottling.
Pairing Notes
Perfect with seafood, scallops, shrimp, oysters, ceviche, asparagus, and dishes marinated in citrus. Also delicious with fresh goat cheese or rosemary-herbed olives.
