2009 “Roses Are Red” Rosé

The “Roses Are Red” Rosé is a custom wine made exclusively for Big Tree Bottles in Bushwick, Brooklyn, a new wine shop that has quickly developed a following for having terrifically priced selections from around the globe. They are also big supporters of NY wine! Owners Jason and Myriah asked us for a fresh and juicy rosé. It’s ruby-red, crisp, and dense with flavor, bursting with aromas of cherry, watermelons, strawberries, and orange flower – so summery!   Try it with Mediterranean foods, goat or sheep cheeses, pork dishes, and salads.

We made the blend primarily from Cabernet Sauvignon, and added a dash of Petit Verdot, which gave this wine a nice berry punch. The fruit was crushed and then soaked for several hours to extract a bright red color. The juice was then fermented to dryness in cold in stainless steel tanks. After a couple of months resting in tank to settle, it was bottled in summer 2009. (56 cases made)
