Style
This lean, focused Merlot is an inky, deep red, spotlighted by loads of black cherry and blackberry, currant liqueur, anise, pepper, leathery spice, tobacco, and coee. Dialed up with Petit Verdot and Cabernet Sauvignon, its body and structure are bold, but not overly weighty. It is also quite age worthy and capable of cellaring.
Pairing
BOE Merlot has a backbone of higher acidity and finely tuned tannins making it an ideal match for rich foods. A palate-pleasing wine made for a nice steak, pork, lamb, roasts, and sharp or earthy cheeses.

Process
Stainless steel fermented separately, the various lots were aged in new and second-year oak barrels for between 12 and 14 months. Most barrels were French; a few were American.
