Style

A traditional, old world styled Sauvignon Blanc with a nose of gooseberry, grapefruit, and grass. The palate has a crisp lemon backbone combined with tropical fruits like guava, starfruit, and passionfruit. Light and refreshing with lots of acidity, it finishes clean, with lingering minerality.

Pairing

Perfect with seafood, scallops, shrimp, oysters, ceviche, asparagus, and dishes marinated in citrus. Also delicious with fresh goat cheese or rosemary-herbed olives.

Grape Varietals

100% Sauvignon Blanc (two vineyards)

Region

North Fork of Long Island

Process

Two lots of fruit were fermented separately, each in stainless steel tanks at cool temperatures. The wine was allowed to ferment to complete dryness, to bring out the citrus and mineral notes that Long Island Sauvignon Blanc is known for. One lot rested on its fine lees for several weeks before blending the two together. The wine then rested in tank until bottling.
