Style
Crafted in a Burgundian method, this golden-hued Chardonnay exhibits a subtle creaminess matched with great acidity and structure. Our third vintage release of this style of Chardonnay results in a fusion of baked apple, dried pineapple, quince, tapioca with layered vanilla and hints of smoke and honey. Old-world touches of mineral, walnut, and bright acidity balance the richness. It matures well in the cellar!
Pairing
A balanced, substantial Chardonnay, this white has potential to stand up to anything which requires a white with some weight. Substantial fish, scallops, lobster, pork, veal, chicken, turkey, medium firm cheeses, grilled vegetables. Great for the fall/winter months.

Process
Stainless-steel fermented and stirred on its lees for two months in tank. Matured in a combination of new and used French oak for 4 months. 100% malolactic fermentation to brighten fruit.
